Real Meatballs and Spaghetti

Ingredients

For the meatballs:

1/2 pound ground veal
1/2 pound ground pork
1 pound ground beef
1 cup fresh white bread crumbs (4 slices, crusts removed)
1/4 cup seasoned dry bread crumbs
2 tablespoons chopped fresh flat-leaf parsley
1/2 cup freshly grated Parmesan cheese
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground nutmeg
1 extra-large egg, beaten
Vegetable oil
Olive oil

For the sauce:

1 tablespoon good olive oil
1 cup chopped yellow onion (1 onion)
1 1/2 teaspoons minced garlic
1/2 cup good red wine, such as Chianti
1 (28-ounce) can crushed tomatoes, or plum tomatoes in puree, chopped
1 tablespoon chopped fresh flat-leaf parsley
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper

For serving:

1 1/2 pounds spaghetti, cooked according to package directions
Freshly grated Parmesan

Directions

Place the ground meats, both bread crumbs, parsley, Parmesan, salt, pepper, nutmeg, egg, and 3/4 cup warm water in a bowl. Combine very lightly with a fork. Using your hands, lightly form the mixture into 2-inch meatballs. You will have 14 to 16 meatballs.

Pour equal amounts of vegetable oil and olive oil into a large (12-inch) skillet to a depth of 1/4-inch. Heat the oil. Very carefully, in batches, place the meatballs in the oil and brown them well on all sides over medium-low heat, turning carefully with a spatula or a fork. This should take about 10 minutes for each batch. Don't crowd the meatballs. Remove the meatballs to a plate covered with paper towels. Discard the oil but don't clean the pan.

For the sauce, heat the olive oil in the same pan. Add the onion and saute over medium heat until translucent, 5 to 10 minutes. Add the garlic and cook for 1 more minute. Add the wine and cook on high heat, scraping up all the brown bits in the pan, until almost all the liquid evaporates, about 3 minutes. Stir in the tomatoes, parsley, salt, and pepper.

Return the meatballs to the sauce, cover, and simmer on the lowest heat for 25 to 30 minutes, until the meatballs are cooked through. Serve hot on cooked spaghetti and pass the grated Parmesan.

Grilled Peach Salad

Ingredients

Dressing:

3 tablespoons rice wine vinegar
1 tablespoon Dijon mustard
1/3 cup olive oil
1/2 teaspoon salt

Salad:

3 peaches, pits removed and cut into wedges
1 tablespoon olive oil
1 teaspoon salt
5 cups mesclun greens mix
1/2 cup chopped pecans
1/3 cup crumbled feta cheese

Directions

Preheat a grill pan to medium-high heat.

Dressing:

Combine the rice wine vinegar and Dijon in a small bowl. Slowly pour the olive into the bowl, whisking constantly to emulsify. Season with salt.

Salad:

Place the peaches in a bowl and drizzle with olive oil. Sprinkle with salt and toss well. Place on the grill and cook for 1 to 2 minutes on each side.

Place the mesclun mix in a large bowl. Add chopped pecans, feta, and cooked peaches. Drizzle salad with dressing and toss to coat.

Egg Patties

INGREDIENTS

Eggs 6
Tomato 1
Potatoes 3-4
Green chillies 2-3
Ghee
Coriander leaves 1 small bunch
Onion 1 small
Salt to taste

2 COOKING DIRECTIONS

Boil the potatoes, peel, mash well and keep on one side.
Chop the onion, tomato and green chilies very fine.
Wash and chop the coriander leaves.
Heat a tbsp of ghee and fry the onion till tender, but not browned.
Add the tomato and cook for a few minutes.
Add salt and coriander and break in 5 eggs, stirring constantly till the mixture thickens and sets.
Remove from heat and let cool.
Beat the remaining egg well in a saucepan and keep on one side.
Knead the potato dough again and make flat cases.
Place a heaped spoonful of the egg mixture in the center and cover, folding in the sides, to seal the stuffing.
Press between the palms to make a flat cake.
Heat some ghee or oil in a pan.
Dip each patty in the beaten egg, roll in breadcrumbs, if desired, and fry till nicely browned.
Serve hot with tomato sauce or chutney.

Masala Vada or Wada

INGREDIENTS

Chana dal (Pachi chenaga pappu/chenaga bedalu)- 1 cup
Yellow moong dal (Pesala pappy)- 2 tbsps
Small Green chillies -5
Grated fresh coconut- 2 tbsps
Ginger garlic paste- 1/2 tsp
Onion -1 (chop it pretty small)
Chopped cilantro- 1 tbsp
Chopped dill- 2 tbsps
Salt- 1 tsp ( add according to ur taste)

2 COOKING DIRECTIONS

Soak chana dal and yellow moong dal together in water for 2 hours.
Drain the dal, make sure there is absolutely no water left.
In a food processor grind coarsely the dal and green chilies together.
Don’t make a paste out of it, Its important that you grind the dal coarsely.
Now to this dal and chillie mixture add the coconut, ginger garlic paste, finely chopped onion, salt, coriander and dil.
Heat oil in a deep skillet and fry the vadas.
Enjoy the vadas like an evening snack with a hot cup of tea.
